Often referred to as Mexico’s national dish and indisputably its most patriotic, chiles en nogada is native to Puebla, a two-hour drive southeast of Mexico City. A poblano chile pepper is stuffed with meats, fruits, and spices, covered in a creamy white nut sauce, with vivid red pomegranate seeds—it looks like art on a plate and tastes like a dessert and an entrée rolled into one. It has the colors of the Mexican flag–green, red, and white. The very word poblano means “from Puebla.”

Dating back to the 18th century, this festive dish was prepared in a feast for General Agustin de Iturbide who had just signed the treaty granting Mexico independence from Spain in 1821, the Treaty of Cordoba - by nuns at Convent of Santa Monica to honor Mexico’s new flag. To this day, chiles en nogada is still served for Mexican Independence day and other special occasions, however, at Agustin's restaurant - Viva Mexico Tia Lupita, it is a specialty that can be had every day. Agustin has been making this dish for almost 2 decades. He utilizes only the freshest ingredients sourced from Guadalajara's biggest market and also from his own backyard where he grows pomegranates.

Not ony is Agustin a spectacular chef, hosting the president of Mexico and Jalisco's governors on multiple occasions, he is also involved in philanthropic activities as well...giving back to the community that he grew up in.

San Juan Cosala, a small village in Mexico, attracts a lot of North American retirees. About 30 years ago a couple set up a program called Operation Feed to provide nourishment to the poorest families in the area.

Through Agustin Vazquez, the legacy of the original founders of Operation Feed lives on.
